Atlantic Sailfish: The crown jewel of Islamorada's offshore waters, sailfish are the ultimate game fish. Known for their incredible aerial acrobatics, these billfish will test your skills and provide an unforgettable battle. Winter and early spring are prime sailfish season, but we can encounter them year-round. Watching a sailfish light up with vibrant purple and blue stripes as it charges a bait is a sight you'll never forget.
Tarpon: Often called the "silver king," tarpon are the royalty of inshore fishing. These prehistoric giants can reach weights over 200 pounds and are famous for their spectacular leaps and gill-rattling head shakes. We target them around bridges and in the backcountry, with peak season running from April through June. Landing a tarpon is a true badge of honor for any angler.
Sea Trout: While not as glamorous as some of our other targets, sea trout (or spotted seatrout) are a staple of Florida Keys fishing. These wily predators are found in the grass flats and channels, offering great light tackle action. They're also excellent table fare, making them a favorite for anglers looking to bring home dinner. Fall and winter are the best times to target bigger trout.
Cobia: Often called "lemonfish" by locals, cobia are hard-fighting fish that love to hang around structure. We often find them near wrecks, buoys, or even following large rays and sharks. Cobia have a reputation for being curious, sometimes swimming right up to the boat. This makes them a blast to sight-cast to, and their strong runs will put your tackle to the test. Spring is prime time for cobia, but we catch them year-round.
Red Snapper: These crimson beauties are the pride of the reef. Found over rocky bottom and wrecks, red snapper put up a great fight and are absolutely delicious on the dinner table. We target them with heavy bottom rigs, often in water 100 feet or deeper. The excitement of feeling that distinctive "thump" and then cranking up a big red snapper is hard to beat. While there are seasonal closures, when they're open, red snapper are always a top target.
Bluefin Tuna: The heavyweight champion of the offshore world, bluefin tuna are the ultimate prize for serious anglers. These massive fish can reach weights over 1,000 pounds, though the ones we encounter in Islamorada waters are typically in the 100-300 pound range. Joe and Jess took our family out and worked hard to get us on the fish. They both were awesome with our boys, being patient and answering all their questions. Best part was they let us fish! They didn't just cast then let us reel, we got to do it all! We are a MO family that fish all the time in lakes and rivers, so we thoroughly enjoyed the trip out on the open water with Joe and Jess!

I had the greatest time out on the water with Joe. I was only in town for a few days & wanted to get some big catches on the fly. Winds were high & chances weren’t looking good, but Joe took me out & got me in prime position to beat the weather & get some good catches. And good catches we got! We caught mahi, grouper, & tarpon galore. Plus, we had a blast while doing it. Can’t wait til I’m back in Islamorada to get out on the water with him again.

We had a great day on the water with Capt. Joe and Jessica. Weather was not in our favor at all, and they did a great job of putting us on a variety of fish, as well as making it fun and approachable for our two kids (11 and 13). We caught fish, had some laughs and felt well take. Care of by this hard working team. Would definitely fish with them again when we come back to visit.

Atlantic sailfish are the showstoppers of our offshore trips. These beauties can hit 10 feet long but usually average around 7.5 feet and 50 pounds. They're lightning-fast, known to leap and dive during fights that'll test your arms. We find them in warm waters, often 30 to 65 feet deep, but they'll hunt down to 650 feet. Winter's prime time in the Keys, but "Sailfish Alley" between Miami and Fort Pierce is hot year-round. Folks love targeting sailfish for their acrobatics and sheer power. They're not just strong, but smart too. They use their massive dorsal fin to herd baitfish and can even change colors to communicate while hunting. When we're after sails, we'll slow-troll with live bait at 30-65 feet. My local trick? Use bright pink and white lures - they can't resist 'em. Just be ready for a fight when they hit. These fish will make you earn every inch of line!
Bluefin tuna are the kings of the offshore world here in Islamorada. These massive fish can top 1,000 pounds, though we usually see them in the 200-500 pound range. Anglers love bluefins not just for the incredible fight, but also for their prized meat. It's considered the best sushi-grade tuna you can get. We usually troll with large lures or live bait to locate schools. Here's a local tip: keep an eye out for working birds. They'll often lead you right to feeding tuna. Just remember, bluefin are strictly regulated, so we always follow catch limits to help preserve this amazing species for the future.
Cobia are some of the most unique fish we target here in Islamorada. These solitary swimmers can grow up to 6 feet long and 100 pounds, often mistaken for sharks due to their size and single dorsal fin. You'll typically spot them near reefs, wrecks, or buoys in depths of 30 to 70 feet. Spring's the prime time to chase cobia during their spawning run, but we can find them year-round. They're sight-fishing favorites - keep your eyes peeled for that distinctive brown color gliding just below the surface. Anglers love cobia for their powerful fights and excellent table fare. The meat's firm with a mild flavor that's hard to beat. When we hook one, be ready for some serious action! Here's a local tip: try tossing a bucktail jig near any floating debris or markers. Cobia often hang around these structures looking for an easy meal. The color doesn't matter much, but I've had great luck with 4 to 8 oz jigs. Once hooked, hold on tight - these fish don't give up easily!
Red snapper's a real trophy catch out here in Islamorada. These beauties can grow up to 3 feet long and pack a serious punch when hooked. You'll find 'em hanging around reefs and wrecks, usually 100 to 300 feet down. Late spring through fall's prime time, when the water's warm and they're feeding heavy. Folks love targeting red snapper for their fierce fight and top-notch eating. That bright red color and sweet, white meat make 'em a favorite on dinner plates. When we're after the big ones, I'll use fresh cut bait or live pinfish. Here's a local trick: chum the water a bit, then drop your line right into the feeding frenzy. Just remember, these guys are smart. They'll try to duck into structure and cut your line, so be ready with a firm hookset and steady pressure. Land a red snapper, and you've got bragging rights and one heck of a fish fry coming your way.
Sea trout, also known as speckled trout, are a favorite target here in Islamorada. These silvery, torpedo-shaped fish typically run 14 to 24 inches and put up a great fight on light tackle. You'll find them hanging around grass flats and shallow waters, especially at night. During winter, they school up in deeper waters up to 160 feet. These fish are prized for their delicate, flaky white meat. Just be careful not to overcook it, or it'll turn mushy. Sea trout feed on shrimp, small crabs, and baitfish, so we'll use artificial lures that mimic their prey. Jerk baits, topwater plugs, and plastic shrimp work well. The best time to target sea trout is during their spawning season in November and December. They like cooler water between 33 and 80 degrees. One local trick: try trolling slowly along grass flats if you're having trouble spotting them. What makes sea trout fishing special is the combination of their tasty meat and the fun of sight-fishing in clear, shallow water. It's a great species for anglers of all skill levels.

Tarpon put up an incredible fight, testing your skills and gear. They're not great eating, so it's all about the sport. We usually catch and release to keep the population healthy. If you want to land one, try live bait like pinfish or crabs. My local tip? When you see a school, cast ahead of them and strip your line fast – that often triggers a strike.
